#33 Nectarine-Oat Upside Down Cake

Another upside-down cake. This one called for free-stone nectarines. I remembered that I needed nectarines when Ian and I were at the Saturday Farmer’s Market so I grabbed 4 ripe ones. I didn’t know that they needed to be free-stone nectarines, but they happened to be just that. I also wasn’t sure of the number of nectarines that I needed and the recipe called for 2 pounds; the 4 I grabbed were just that. It was perfect!

This one turned out SO deliciously. It wasn’t quite warm by the time we all ate it, but I was able to fit the whole thing in the microwave and warm it up for us. It was just like eating peach cobbler but in cake form. Both Ian and Kevin said it was their favorite so far, although Ian clarified that it was his favorite fruit-based cake. Nothing beats chocolate for my husband 🙂
